The Germans from Russia Heritage Collection is pleased to provide
the new Strasburg Centennial Cookbook. Strasburg is located
in Emmons County, south-central North Dakota in the heart of German-Russian
country. The heritage and culture of the Germans from Russia is
shared with this excellent foodways cookbook featuring many of the
traditional recipes.
Knoepfle Soup well known to Dakotans is featured with 10 different
recipes from well known Strasburg area cooks. Other traditional
recipes included are: Schnitz Kuechla, Blachenda, Strudels, Fleischkechla,
Spaetzle, Dumplings, Potato Buttons, Sauerkraut Buttons, Kraut Knoepfle,
Borecka, Cheese Buttons,
There are twelve different recipes for Kuchen including: Wedding
Kuchen, German Kuchen, and Filled Kuchen.
Familiar family names from the Strasburg area have submitted recipes
for Strasburg's 2002 Centennial Cookbook: Bauman, Bernhardt, Bosch,
Deringer, Gefre, Gefroh, Getz, Glass, Heidrich, Lauinger, Reis,
Roehrich, Scherr, Schneider, Senger, Selzer, Wagner, Volk, Voller,
and Wald.
The ancestors of these Strasburg area families immigrated from
the Catholic Kutschurgan villages of South Russia to settle in Emmons
County in the late 19th century. One of these Kutschurgan villages
was "Strassburg". The other Kutschurgan mother colonies
were: Baden, Elsass, Kandel, Mannheim, and Selz.
