He was born on March 6, 1922 in Minneapolis. He received both his bachelor's degree in chemical engineering in 1944 and his doctorate in agricultural biochemistry in 1952 from the University of Minnesota. He was an engineering officer with the U.S. Navy serving in both the Atlantic and Pacific theatres from 1944-1946. Prior to coming to NDSU, he served as Project Leader of flour quality research at General Mills, Minneapolis. He was appointed Chairman of the Department of Cereal Science in 1961. He was appointed to the newly created position of Vice President for Agriculture in 1969 and named Vice President for Agricultural Affairs in 1980. In November 1978, he was named Acting Dean of the College of Agriculture and Director of the Experiment Station. Dr. Gilles left NDSU in 1981 to become the Administrator of the Federal Grain Inspection Service in Washington, D.C.
